  • 4 medium-sized potatoes, peeled and diced
  • 2 cups of fresh spinach leaves, washed and chopped
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon of ginger paste
  • 1 teaspoon of garlic paste
  • 1/2 teaspoon of turmeric powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1/4 teaspoon of red chili powder (adjust to taste)
  • Salt to taste
  • 1/2 cup of water
  • Fresh cilantro leaves for garnish

  1. Heat the vegetable oil in a pan and add cumin seeds. Let them splutter.
  2. Add the chopped onion and sauté until golden brown.
  3. Stir in the ginger and garlic paste and cook for a minute until fragrant.
  4. Add the pureed tomatoes and cook until the oil separates from the mixture.
  5. Mix in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook the masala (spice mixture) for a couple of minutes.
  6. Add the diced potatoes and chopped spinach. Mix well to coat them with the masala.
  7. Pour in the water, cover the pan, and let the curry simmer for about 25-30 minutes or until the potatoes are tender.
  8. Check the seasoning and adjust if needed.
  9. Once the potatoes are cooked, garnish with fresh cilantro leaves.
