Ingredients:
- 4 medium-sized potatoes, peeled and diced
- 2 cups of fresh spinach leaves, washed and chopped
- 1 tablespoon of vegetable oil
- 1 teaspoon of cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon of ginger paste
- 1 teaspoon of garlic paste
- 1/2 teaspoon of turmeric powder
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1/4 teaspoon of red chili powder (adjust to taste)
- Salt to taste
- 1/2 cup of water
- Fresh cilantro leaves for garnish
Directions:
- Heat the vegetable oil in a pan and add cumin seeds. Let them splutter.
- Add the chopped onion and sauté until golden brown.
- Stir in the ginger and garlic paste and cook for a minute until fragrant.
- Add the pureed tomatoes and cook until the oil separates from the mixture.
- Mix in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook the masala (spice mixture) for a couple of minutes.
- Add the diced potatoes and chopped spinach. Mix well to coat them with the masala.
- Pour in the water, cover the pan, and let the curry simmer for about 25-30 minutes or until the potatoes are tender.
- Check the seasoning and adjust if needed.
- Once the potatoes are cooked, garnish with fresh cilantro leaves.
